The best time for bacon is right after you wake up, or so my Mom told me. She always said “3 pieces of bacon a day will keep the doctor away.” That’s where I came up with the idea for the Triple-Threat Bacon Breakfast Burrito. That and intense fear of doctor’s offices.
I don’t like my burritos sloppy. That’s why this burrito recipe is super simple, and it uses fresh ingredients.

Ingredients:
- 1 burrito-size flour tortilla
- 1 egg, beaten
- 3 strips bacon
- 1 roma or other tomato (preferably nice and ripe), chopped into chunks and seeds mostly removed
- A little sprig of fresh cilantro
- Salt (Bacon Salt if you have it) and Pepper
Prepare
Pre-heat your oven to 375 degrees. Once pre-heated, place bacon on a cookie sheet lined with aluminum foil and place in the middle rack of the oven. Turn on your timer for 10 minutes and make your coffee or tea.
After 10 minutes, check the bacon. If it’s done enough for your taste, take it out. If not, leave it in the oven…but keep an eye on it. Bacon can turn from crispy to overcooked in no time. Once the bacon is cooked the way you want, take it out of the oven and put it on a plate covered with a paper towel to soak up the fat.
Beat in the salt and pepper with the eggs (just do however much sounds good to you). Coat a small saucepan with non-stick spray and pour egg into the pan. Cook over medium-low heat. Once the egg is done, place the tortilla in your microwave and heat for 10 seconds, then place tortilla on a plate and put the egg, tomato, and bacon in the middle of the tortilla. Either chop or break the cilantro leaves into bits and sprinkle on top. Wrap up the tortilla and you’re good to go!
